Ingredients
  

  • 4 oz ½ cup chorizo (pork, turkey, or soy)
  • 2 large eggs or 1 whole egg + 1 egg white for a lighter version
  • ¼ cup shredded cheese cheddar, Monterey Jack, or Mexican blend
  • ½ cup cooked potatoes diced and pan-fried OR ¼ cup black beans
  • 1 large flour tortilla or whole wheat for a healthier option
  • Optional toppings: Avocado slices salsa, hot sauce, bell peppers, or onions

Instructions
 

  • Cook the Chorizo:
    Heat a pan over medium heat.
  • Add the chorizo and cook for 5-7 minutes, breaking it up with a spoon until fully cooked.
  • Remove excess oil if needed.
  • Scramble the Eggs:
    In the same pan, crack the eggs and scramble them until fluffy.
  • Mix them with the cooked chorizo.
  • Prepare the Fillings:
    Heat the tortilla in a pan or microwave for a few seconds to make it more flexible.
  • Assemble the Burrito:
    Lay the warm tortilla flat, then add:
  • Cooked chorizo and eggs
  • Shredded cheese
  • Potatoes or black beans
  • Any extra toppings (avocado, salsa, hot sauce)
  • Fold the Burrito:Fold in the sides first, then roll it tightly from the bottom up.
  • Toast It (Optional)
  • For extra crunch, heat the burrito in a pan for 1-2 minutes per side until golden brown.

Notes

For a healthier version: Use turkey or soy chorizo, egg whites, and whole wheat tortillas.
For extra crunch: Add crispy hash browns inside the burrito.
For meal prep: Wrap burritos in foil and store in the fridge for 3 days or freeze for up to a month.
