Ingredients
  

  • 3 cups cooked pasta Rotini, bowtie, or penne recommended
  • 2 cups chopped romaine lettuce
  • 1 cup cooked and sliced chicken optional – can substitute with shrimp, tofu, or bacon bits
  • 1/2 cup shaved or grated Parmesan cheese
  • 1 cup croutons
  • 1/2 cup cherry tomatoes halved (optional)
  • 1/4 cup sliced red onions optional
  • For the Caesar Dressing Homemade Option:
  • 1/2 cup mayonnaise or Greek yogurt for a lighter version
  • 2 cloves garlic minced
  • 2 tbsp lemon juice
  • 1 tsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • 1/4 cup grated Parmesan cheese
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1-2 anchovy fillets minced (optional but traditional)

Instructions
 

  • Cook the Pasta
    Bring a large pot of salted water to a boil.
  • Add pasta and cook according to package instructions until al dente.
  • Drain and rinse under cold water.

  • Prepare the Dressing:

  • If using anchovies, mash them into a paste and mix into the dressing.

  • Assemble the Salad
